Baked Stuffed Jalapeños ~ YUM

This weeks adventure took me to a cantina near a ski resort. After karate class, I went with my Sensei (teacher) to meet up with her friends for a margarita. On special, were there lovely stuffed jalapeños that were baked. They came arranged on a plate with fresh salsa in the middle, and lying on a bed of shredded lettuce. They were most delicious and I went on a mission to recreate them.

Baked Stuffed Jalapeños 

The measurements are just for a guide.Depending on the size of your peppers, you may need more or less cheese and bacon.
2 oz finely shredded cheddar cheese
3 Tablespoons of cream cheese (easier to work with if at room temp)
2 to 3 slices of thick sliced bacon
8 Jalapenos ( Try to choose peppers that are nicely round rather than long so it can hold more filling.)

  1. In a 450 degree oven bake bacon for 8 to 10 minutes, so it is almost but not quite done cooking. 
  2. Leaving the stems on, cut the jalapeños length-wise, down the middle. Using a spoon, scrape out the seeds and membrane. 
  3. With the back of the spoon, mix together the chesses.
  4. Cut the bacon into pieces slightly smaller than the length of the jalapenos.
  5. Stuff peppers with the cheese and top with slice of bacon.
  6. Bake for about 7 - 10 minutes 
  7. Top with salsa, hot sauce, and/or sour cream
