I love pumpkin. It is a weakness how much I love pumpkin. I scoured the internet and tried a few recipes this weekend. Using what I learned from the different recipes, I came up with my own. I hope you enjoy!
Pumpkin Pancakes serving 1

1 extra large free range egg
1/3 C pumpkin puree
1/3 C almond flour (or any other nut flour)
1/4 tsp cinnamon or pumpkin pies spice
pinch of salt
1/4 tsp vanilla extract
1/8 tsp baking soda
In a medium bowl, beat egg. Stir in pumpkin. Add almond flour, spice, salt, vanilla and baking soda. Stir to combine. Warm up a cast iron pan over medium low heat and grease with butter or coconut oil. When it is hot drop pancake batter by 1/4 cup scoop onto skillet. The batter id thick, so useing the back of the scoop push the batter down gently. Cook until the edges look firm, then flip. Gently push pancake down, it will spread out the uncooked batter a bit further and cook another minute on the other side. Serve drizzled with honey, maple syrup, or fresh fruit. Enjoy.
Makes about 3 4″ pancakes.
