Breakfast Mexi Peppers ~ My Version

I found this recipe, well a close version of it, on the Atkins website. I have to say that it is very good and will be making it often. I have heard that this is just as good without the cheese.

Ingredients

  • 7 Ounce-weights chorizo sausage, crumbled
  • 1/2 Cup diced onion
  • OPTIONAL1/4 Cup shredded Cheddar cheese 
  • 3 large eggs, beaten
  • 2 medium red bell peppers

Directions

  • Preheat oven to 400°F. Line a baking sheet with foil.
  • Cook chorizo and onions, stirring to break up lumps, until browned. Drain excess fat.
  • Place meat mixture in mixing bowl and combine with the cheese and eggs.
  • Cut peppers in half lengthwise. Scoop out seeds and cut away ribs.
  • Fill each pepper with one-quarter of the meat mixture. Place on the prepared baking sheet. Bake for 25–30 minutes and serve hot.
